Zapiekanka + Egg Custard Cupcakes

There are few things that make me happier than a successful meal to tingle the senses. Szym used our pizza pan today to make Zapiekankas and I made a second iteration of egg custard cupcakes which turned out wonderfully after I made a few modifications to the three-layer magic cake recipe that I found on the Internet. I'm posting the recipe for that first before I forget it:

Egg Custard Cupcakes derived from the Magic Cake recipe.

Main Ingredients:
  • 4 Eggs separated
  • 1 Tsp Vanilla Extract
  • 110g Sugar
  • 90g Butter
  • 1/2 cup Flour
  • 1+1/2 cup Milk or Half/Half
      For the frosting:
  • 1/2 cup Milk or Half/Half
  • 65g powdered sugar
  • 230g butter
  • 2tsp cornstarch
  • 1/4 tsp vanilla

Preheat oven to 325 degrees. Save two egg yolks for the frosting after separating four yolks from the whites. With the four whites, beat in mixer until stiff peaks. Mix two yolks, sugar, melted butter, vanilla, and milk. Mix in flour when the previous ingredients are well blended. Carefully move in stiff egg peaks into mixture 1/3 at a time until just fully incorporated. Batter will be thin. Pour into 12 cupcake molds lined with cupcake cups. Bake for 30 min until tops are just golden brown.

For the frosting, double boil milk, sugar, cornstarch and vanilla until a thick paste. Remove from heat and allow to cool down before mixing in butter until a smooth creamy frosting texture. I have pastry bags which I use for making macaron fillings and pastry creams. They're cheap on Amazon (around $15 for 100) and easier to clean up than professional pastry bags. Frosted cupcakes when fully cooled down. The cupcakes should have a custard bottom and a fluffy cake top.

Edit: I just tried this with a mango. Essentially, I replaced the weight of the milk with a blended mango + milk mixture. Doesn't work. The layers don't separate as expected and instead you get a fluffy cake. Still tasty, but not the custardy goodness that I was hoping for in the vanilla version. More updates next time I try this!
